a little more technical bowl of oats this morning but worth the dirty dishes
Neapolitan baked oats. the three perfect matches of strawberry, vanilla, and chocolate.
i haven’t had neapolitan ice cream in hot minute so i recreated it in a breakfast bowl.
unpopular opinion but i think strawberry is the best flavor out of the three of them😳
but try these baked oats to get a flashback of childhood summers and those big tubs of ice cream that always sat on picnic tables.
Neapolitan Baked Oats:
1/2 cup oats ground into a flour
1 tbs apple sauce
1/2 tbs strawberry jam
3 frozen strawberries
1 1/2 tsp coconut sugar
3/8 tsp baking powder
1/2 tsp vanilla extract
1/2 tsp cashew butter
1 tsp cocoa powder
1/2 tsp chocolate chips
preheat oven to 350f.
take out three small bowls. put three strawberries into one and microwave for 30 seconds. throw away the strawberries to just leave a little juice. grind 1/2 cup oats into a flour and distribute evenly into the three bowls. in the one with strawberry juice and the oat flour, add in 1/2 tbs strawberry jam, 1/2 tsp coconut sugar, and 1/8 tsp baking powder.
in another bowl with oat flour add in 1/2 tbs apple sauce, 1/2 tsp coconut sugar, 1/8 tsp baking powder, 1/2 tsp vanilla extract, and 1/2 tsp cashew butter.
in the last bowl of oat flour mix together 1/2 tbs apple sauce, 1/2 tsp coconut sugar, 1/8 tsp baking powder, 1 tsp cocoa powder, and 1/2 tsp chocolate chips.
grease a ramekin and add in the batters separately. angle the bowl so they do not run over each other and there is a clear separation between the flavors.
bake for 15-25 minutes and then top with strawberry slices, greek yogurt, and more chocolate. enjoy!!
