i don’t think i can take another cloudy day here
if there’s gonna be no sun there could at least be some snow for balance or something. if texas gets it i don’t know what nc did to deserve not getting any
anyways, this morning i made some maple coffee (my new fav) and whipped up some blueberry jam stuffed baked oats
i don’t know if it truly counts as jam but i’m going to say that’s what it is
blueberry jam stuffed baked oats:
handful of blueberries
1 tbs honey
1/2 cup oats ground into a flour
2 tsp sweetener
1/2 tsp baking powder
1/2 tsp vanilla
2 tbs apple sauce
1/4 cup almond milk
cream cheese glaze:
1/2-1 tbs light cream cheese
pinch of powdered sugar
almond milk
preheat oven to 350f. turn the stove up to medium heat and add a small pot. toss in a handful of blueberries and honey. mix around until the blueberries are soft then mash. turn down to medium low and let thicken a little, then let chill in the refrigerator to get even thicker.
blend up oats and add to a bowl with all the other ingredients. mix together and add half the batter in a greased ramekin. place the jam in the middle, then top with the rest of the batter.
bake for 15-20 minutes.
in another small bowl, add cream cheese and powdered sugar. then add in a bit of almond milk at a time until it becomes a glaze.
top the oats with glaze and enjoy!
