i was scrolling on instagram last night looking for food inspo and recipes to try and i got really overwhelmed. it all seemed like too much.
too many ingredients, too many calories, too much food. sometimes i still get an urge to back away from meals.
but i have to remind myself i’m doing everything correctly. i’m eating as much as i’m supposed to and enjoying what i’m making.
food isn’t supposed to be scary. at the end of the day it’s just fuel. we need it. so why not enjoy it while we go.
make the breakfast you’ve been eyeing on your explore page. add some honey to your coffee. sprinkle some sugar on your strawberries. put 2 bananas in your smoothie bowl. your tastebuds, body, and future will thank you.
red velvet pancakes:
1/2 cup oat flour
1/4 cup greek yogurt
2 tsp Truvia sweetener
1/2 tsp baking powder
1/2 tsp vanilla extract
1/2 tbs cocoa powder
red food coloring/beetroot powder
cream cheese frosting:
1 tbs cream cheese
2 tbs greek yogurt
1 tbs Truvia confectioners sugar
in a bowl add in oat flour and greek yogurt. stir, then add in sweetener, baking powder, vanilla, and cocoa powder. mix together and milk in 1/2 tbs at a time until it forms a batter. add in a few drops food coloring and stir.
spray a pan and add the batter. place onto a plate.
in a bowl stir together cream cheese, greek yogurt, and confectioners sugar. add a dash of water to thin it out and spread on top of the pancakes.
