i’m surviving on red breakfast foods
today is inspired by wellwithjuliana who has the most delicious pop tart recipes on her feed
going back into touch with my childhood filled of poptart wrappers and gas station stops before school
a red velvet cupcake poptart remade in my own kitchen and for you to make it yourself too
red velvet cupcake oat tart:
1/3 cup oats ground into a flour
2 tbs greek yogurt
1 tsp cocoa powder
1 tsp honey
red food coloring
filling:
equal parts cream cheese and greek yogurt
1 tsp honey
frosting is the same with less honey
preheat oven to 350f. blend up 1/3 cup of oats into a fine flour and pour into a bowl. add in all the ingredients except red food coloring. it should for a dough. add a few drops of red food coloring and fold until it’s evenly distributed and a light pink color.
roll it out into a rectangle on a lightly floured surface. cut it in half and place one half of the rectangle on a greased pan.
mix together equal parts cream cheese and greek yogurt (can sub DF cream cheese and coconut yogurt) and 1 tsp honey (or maple syrup).
add the filling onto the poptart leaving the edges bare. top with the other half of the dough and seal with a fork. spread some melted butter on top to take off all the flour.
bake for 15 minutes.
make the frosting.
after the poptart is done, add the frosting and enjoy!
