it’s crazy that at the beginning of quarantine i hated coffee. i started out with the whipped coffee (as one does) every so often and now i’m here, drinking coffee pretty much everyday
today, i was craving some sweet coffee cake to go on the side but of course, i had to turn it into baked oats
so coffee cake baked oats? you’re welcome
Coffee Cake Baked Oats:
1/2 cup oats ground into a flour
1 1/2 tbs apple sauce
2 tsp coconut sugar
1/4 tsp baking powder
1/8 tsp nutmeg
1/8 tsp cinnamon
1/4 cup almond milk
1 tbs almond flour
1 tbs rolled oats
1 tsp brown sugar
cinnamon to taste
nutmeg to taste
1 tsp maple syrup
spoonful of coconut cream
1/4 tsp maple syrup
preheat oven to 350f. grind up oats and add to a bowl. as in apple sauce, coconut sugar, baking powder, nutmeg, and cinnamon. mix together and then pour in almond milk and mix again. add to a greased ramekin.
in another small bowl add in all the topping ingredients and mix until it forms a crumble. you may need a little more maple syrup. sprinkle on top of the oats.
bake for 15-25 minutes (i did 15 on this one)
in another small bowl, open a can of coconut milk and scoop one spoonful of cream from the top. then mix in some maple syrup.
after the oats are done cooking, add some glaze to the top and enjoy with a big cup of coffee!
