i’ve made lofthouse cookies a few times throughout quarantine and they were great

definitely gives off 5th grade end of school party vibes

so today i made lofthouse inspired baked oats; with yellow frosting because yellow is my favorite color💛

it’s the beginning of a new semester for me and i needed a pick-me-up before i got started and this was it

Lofthouse Sugar Cookie Baked Oats:
1/2 cup oats blended into a flour
2 1/2tbs greek yogurt
2 tsp Truvia sweetener
1/2 tsp baking powder
1/2 tsp vanilla extract
1/4 cup almond milk

Frosting:
2 tbs greek yogurt
2 tsp Truvia confectioners sugar
1 drop food coloring
rainbow sprinkles

preheat oven to 350f. blend up oats into a flour and then pour into a bowl. add in the rest of ingredients and mix. pour into a greased ramekin and bake for 15-25 minutes.
to make the frosting add in greek yogurt and confectioners sugar and mix until uniform. then add in a drop of food coloring and mix again until it’s all distributed and colored.
after the baked oats are done, top with the frosting and the sprinkles all over. enjoy your sugar cookie!
