so this morning i saw two things on my explore page
1. a super yummy recipe for energy balls
2. a “what to eat before a run” slide that said energy balls

and seeing as it’s saturday and that means i have a saturday morning run, i figured that was a sign to make my own energy balls

they’re super simple, just a few ingredients and you blend it up and mix together

so here they are

coffee walnut energy balls:
1 1/4 cup oat flour
1/2 cup walnut
1 tbs instant coffee
1/4 cup maple syrup
1 tbs trilogy
1/3 cup almond butter
nonfat greek yogurt *optional

pour oats, walnut, instant coffee, and the trilogy (flax, hemp, and chia seeds) into a food processor and blend up
pour it into a bowl and add in maple syrup. if you have runny almond butter pour that in, or microwave for a few seconds so it’s easier to mix.
once everything is completely mixed together, spoon some greek yogurt into another bowl.
roll the dough into tiny balls and dip into the greek yogurt.
then freeze for 30 minutes and get some energy!
