so yesterday i made what might be the most important purchase of my life

and i got a mini waffle maker from target

so i just want to start by saying if you don’t have this i need you to go get it right now. it’s only $10 and it’s so easy to make breakfast with they cooked so fast

i’m in awe and also in love

i made some waffles to start off a beautiful sunday. the sun is out and shining

i love everything lemon so here we are…
OH and i made a coconut cream syrup that pairs so well with this it’s amazing

lemon poppyseed waffles:
1/2 cup oat flour
1 1/2 tbs apple sauce (or 1/2 a banana)
1/2 tsp baking powder
1 tsp poppy seed
1/2 tbs erythritol
1 egg
zest of 1/4 lemon
1 tsp lemon juice
2 tbs almond milk

coconut cream syrup:
2 tbs coconut cream (from the top of a coconut milk can or just canned coconut milk can work too)
1 tbs any kind of syrup
2 tbs Truvia confectioners sugar

plug in your waffle maker and let it heat up. in a bowl mix together all the waffle ingredients. add in almond milk a little bit of a time. you may need a little more or less.
it shouldn’t be super runny, more like a honey consistency.
spray the waffle iron
pour some of the mixture in (mine was 1/3) and close it. let it cook for about 1-2 minutes and then use a utensil to remove and plate. repeat until the batter is gone.

in a small bowl, add in all the syrup ingredients and mix together until fully combined. it should be the consistency of thick maple syrup.
after pour onto the waffles and enjoy!
