starting off the valentine’s themed recipes this week with these strawberry creme oreos🤤

in all seriousness it’s an amazing dessert 10/10 recommend for a valentine’s treat

strawberry is my all time favorite flavor in things. it’s one of the sweetest fruits for me and i think that putting in anything ups the bets for goodness

strawberry oreos:
1 1/2 cup almond flour
1/4 cup erythritol
1/3 cup cocoa powder
1 tsp baking powder
1/2 tsp salt
1/4 cup coconut oil
1/4 cup almond milk
3 tsp vanilla extract
1 tsp maple syrup

strawberry creme:
5 large strawberries
1 tsp strawberry extract
1 1/4 cup Truvia powdered sugar
1/3 cup butter
1 tsp water

mix together all the dry ingredients in a big bowl. in a small bowl mix all the wet ingredients. add the wet ingredients slowly into dry ingredients until fully incorporated. if you need to add in more flour do so but the batter will not be completely dough like.
chill for 30 minutes.
preheat the oven to 350f.
press the dough out evenly onto a floured surface and use a small cookie cutter or anything that will work to make even circles. add to a greased pan and bake for 10-12 minutes.
start making the creme.
add 5 large strawberries to a bowl and microwave for 1 1/2 minutes. blend up and put in the freezer for about ten minutes to cool down and thicken up.
add confectioners sugar and butter to a bowl. put a strainer over the bowl and add the strawberries. press down with a fork until all the liquid has gone into the bowl, then pour it into the sugar and butter. add a tsp of strawberry extract and whip the frosting. add water until it forms a thick buttercream.
let the oreos cool for an hour and then add a spoonful of creme and sandwich them.
then enjoy!
