sunday’s are for baked oats

or… chilled baked oats

really just dessert for breakfast. this layer cake inspired baked oats started the day off just right

it’s more of an oat cake. baked, chilled, filled, and frosted, and with a graham cracker crust? yeah it was delicious

layer cake chilled oats:
1/2 cup oats ground into a flour
2 tbs apple sauce
1 tsp vanilla extract
1/2 tsp baking powder
2 tsp Truvia sweetener
1/4 cup almond milk

graham cracker crust:
1 1/2 graham crackers
3/4 tbs melted butter

frosting:
2 tbs greek yogurt
1 tbs dark chocolate almond butter
1 tbs Truvia confectioners sugar

whipped cream

preheat oven to 350f. grind up oats into a flour then add to a bowl and mix with the rest of the oat ingredients.
add parchment paper to the bottom of two ramekins. grease the sides and then pour half the batter into one, and the rest into the other ramekin.
bake for 15 minutes or until cooked completely through. once finished, take the oat cake out of the ramekins and place in a plate. chill for 30 minutes.
make the graham cracker crust by adding 1 1/2 graham crackers to a bag and smash up into little pieces. mix together with 1/2-1 tbs of melted butter. press the crust down into a ramekin.
in a small bowl make the frosting by mixing together all the frosting ingredients.
place one layer of oat cake on top of the graham cracker crust. top with a layer of whipped cream.
add the other layer of oat cake on top of the whipped cream, and top that layer with the frosting. set in the refrigerator overnight and enjoy in the morning!!
