the last two years i’ve been to the beach, we’ve gotten fritters from a small diner nearby. they are amazing, coated with powdered sugar and deep fried.
of course it’s good. so i kind of wanted to recreate it but in a more nutritious breakfast way.
so pancake fritters is what i came up with. my favorite is apple, so i wanted to create that.
basically i just made mini pancakes stuffed with apple. but it tastes like warm summer and all the treats i would eat then.
Apple Fritter Pancakes
1/2 cup oat flour
2 tsp coconut sugar
1/2 tsp baking powder
1 tsp cinnamon
1/4 cup greek yogurt
8 tbs milk
1 apple
grind oats into a flour and pour into a bowl. add in coconut sugar, baking powder, and cinnamon then mix. then add in greek yogurt and mix. pour 1 tbs of milk in at a time until it reaches the right consistency batter. you may need more or less.
peel an apple and then slice like cutting a potato into chips. with this slices, cut into small circles, rectangles, square-like shapes, enough to fill a mini pancake.
use a 1/2 tablespoon and pour half the batter of it onto a pan on medium- medium low heat. then put one of the apple pieces in the middle and cover with the rest of the 1/2 tbs. repeat until all the batter is gone. when the pancakes are cooked all the way through and the apple is soft, it’s done.
top with greek yogurt, peanut butter, and honey.
this was so so good! one of the best breakfasts i’ve had!
