this creamy cashew baked mac and cheese is to die for
i made it single serve but you can adjust the portions to serve however many people you would like
i added cheese to this recipe but if you want it completely vegan, you don’t have to use it! just the cashew sauce will be enough to fill you up and taste amazing
cashew baked mac and cheese
1/4 cup cashews
4 tbs almond milk (can use coconut for a thicker texture)
1/2 tsp lemon juice
1/4 cup mozzarella
mac and cheese:
1/2 cup pasta
1/2 tbs bread crumbs
cheese for topping
start by soaking cashews in boiling water for 30 minutes. drain, then set aside. bring water to a boil again and add in pasta. cook for 1 minute less than the time instructed in the box.
while it’s cooking, preheat oven to 415f.
add cashews, almond milk, lemon juice and the spices into a food processor. blend until it’s creamy.
take out a sauce pan and put in medium heat. add the sauce and let get warm. then add in the cheese and stir until combined.
when the pasta is done, drain it and pour into a bowl. add the sauce to a bowl and fold in.
pour into a ramekin (or if making more servings use a baking pan). top it with a sprinkle of cheese and 1/2 tbs bread crumbs.
bake for 10 minutes. take out and enjoy!
